FRIGHTFUL FEASTS YOUR GOBLINS WILL GOBBLE UP!

Celebrate Halloween with one or two of our spooky recipes -- you will surely get a few giggles, along with some eeks and eews!

1. Mummy Quesadillas


Start your week out celebrating Halloween with these fun Mummy Quesadillas!  

  • Let the kids help with cutting 4 tortillas into long strips. Scissors work great for this task.
  • Layer four whole tortillas with shredded cheese, cooked ground beef, pepperoni, and more cheese.
  • Top with the cut pieces to resemble a mummy.
  • Add sliced black olives for the eyes.
  • Microwave each tortilla for 1-2 minutes or until warmed through and melty.  Enjoy!

2. Spookie Pasta

Boys love weird and gross everything... even their food! Don't worry though, the meal will taste completely normal!

  • Cook green or black pasta according to package directions.
  • Heat your favorite canned tomato sauce.
  • Slice mozzarella string cheese into little circles - they should look like the whites of eyes.
  • Once pasta is done cooking, drain and transfer to serving bowl.
  • Top pasta with sauce. Place slices of mozzarella string cheese over the pasta and sauce.
  • In the center of each mozzarella slice, place a dot of balsamic glaze or a little piece of olive for the eyeball.

3. Mummy Dogs

  • Preheat oven to 375˚. 
  • Roll out dough, pinch together any seams, then cut into strips about 1 inch wide. 
  • Wrap your dogs, turning them into mummies! 
  • Bake for 12 minutes. 
  • Add mustard, ketchup, or barbecue sauce for the eyes and serve.

4. Pumpkin Guts

Quick and easy always works for dinner, but especially on Halloween! 

  • Preheat oven to 350˚F. 
  • Cut tops off of 4 orange peppers and set the tops aside. Clean the seeds out of the inside of peppers. Using a knife cut two small triangles for the eyes and one small triangle centered and beneath the eyes. Place peppers standing upright in a baking dish.
  • Cover the bottom of the pan with water, about an inch deep. This will create steam and help to cook the peppers. Place peppers in oven and cook for 30 minutes.
  • Cook 8 ounces of whole wheat spaghetti and drain 
  • In large skillet, brown 1 lb. of ground chicken, turkey, or lean ground beef, then drain and add a jar of your favorite spaghetti sauce
  • Mix noodles into skillet of meat and sauce.
  • Spoon spaghetti and meat sauce into peppers. Leave some hanging over edges to hint at "pumpkin guts" spilling out. Place tops back on.

5. Spooky Joes

Spooked up Sloppy Joes for Halloween!

1. Heat a medium skillet over medium high heat. Add all of the following ... do not brown meat first ... I think that is why the flavor is so good:

  • 1 pound of extra lean ground meat (and this is important because you don't brown the meat first so you can't drain it)
  • Dash of pepper
  • 1/2 cup ketchup
  • 1 1/2 teaspoon Worcestershire sauce
  • 3 Tablespoons chili sauce
  • 1 teaspoon vinegar
  • 1 teaspoon celery salt
  • 2 Tablespoons sugar
  • Hamburger buns

2.Lower heat and cook for about 15-20 minutes, stirring occasionally, until cooked through.
3. In the meantime, use Halloween shaped cookie cutters to cut Mozzarella and cheddar cheese slices into shapes.
4. Cut black and green olives to resemble eyes, mouths, and spiders. (For spiders, cut the olive in half lengthwise. Use one half for the body. Cut remaining half into legs. The pimiento of the Spanish olives make great blood for bat fangs! For spider web, you can either cut the cheese into strips and piece together or just cut sections of the cheese out freehand to resemble the web.
5. When finished put a small amount of the sloppy joe mixture on each bun. Top with your spooky cheese creation and place in 250˚F oven for about 5 minutes. It will melt and look even spookier!

6. Spider Pizza

Don't let them crawl away before you eat them!

  • Heat oven to 450° F.
  • Place 1 package pre-baked mini pizza crusts (like Boboli) on a baking sheet
  • Top with ¾ cup pizza sauce and 1 cup shredded mozzarella cheese
  • Pull 2 sticks of cheddar or Colby string cheese into thin strips; place on pizzas in the shape of a web.
  • 3 large pitted black olives
  • Bake pizza for 8 to 10 minutes until cheese melts. Let cool for 2-3 minutes.
  • Cut black olives in half for the body and cut remaining pieces cut lengthwise into strips for legs. Assemble spiders on each pizza.
