TRIPLE DECKER CORNED BEEF SANDWICH & IRISH WHISKEY BROWNIES,YES PLEASE

It takes just five ingredients to make the perfect sandwich for St. Patrick's Day!

My family's favorite St. Patrick's Day meal is always Triple Decker Corned Beef Sandwiches.  With just five ingredients, it's easy to make this corned beef sandwich ahead of time, wrap up and put in the cooler before you head to the parade or eat them at home!

☘️Triple Decker Corned Beef Special

Ingredients:

  • Thinly sliced corned beef
  • Thinly sliced Swiss cheese
  • Marble rye sandwich bread
  • Thousand Island dressing
  • Your favorite prepared coleslaw

Optional: I like to add a pinch of caraway seeds and fennel seeds to my coleslaw. It really compliments every element of the sandwich. 

Directions:

  • Layer in this order: bread, dressing, meat, cheese, meat, coleslaw, dressing, bread. Repeat again, and finish with the last piece of bread.
  • Slice in half and serve with a dill pickle.

☘️BEER-BATTERED IRISH WHISKY BROWNIES

St. Patrick's Day is known for a lot of things…a few of them are beer and whiskey. This fun dessert is a combination of both, plus chocolate and a crunchy batter! If you would rather not use alcohol, you can substitute water for the beer and whiskey.

You will need:

Brownies:
1 box of your favorite fudge brownie mix
Irish whiskey (substitute water if desired)
1 cup dark or semi sweet chocolate chips

Beer Batter:
1 cup flour
1 tablespoon baking powder
1/2 teaspoon salt
1/2 teaspoon sugar
1 cup beer (substitute water if desired)

Vegetable oil for frying
Powdered sugar

Directions (brownies):
1. Prepare brownies as directed on package, using whiskey in place of the water. For example, our recipe called for 1/4 cup of water, we used 1/4 cup of whiskey.
2. Fold chocolate chips into the prepared batter.
3. Bake as directed on the package or until a toothpick inserted around the edges comes out clean.
4. Set aside to cool.
5. Cut into bite size pieces to be battered.

Just before you are ready to fry the brownies, prepare batter and fill heavy saucepan or deep frying pan with 2-3 inches of oil and heat oil to 350 degrees.

Directions (batter and frying):
1. Mix flour, baking powder, salt and sugar in a medium size bowl.
2. Add beer to the dry mixture slowly. Whisk the batter until well blended and smooth.
3. Dip a few pieces of brownies at a time into the batter until completely coated.
4. Fry until golden brown and crispy - about 2 minutes.
5. Place on a plate lined with paper towels to drain.  
6. Dust with powdered sugar and serve warm!

And for the "wee" ones, whip up some Shamrock Meringue Cookies.


☘️SHAMROCK MERINGUE COOKIES

A festive treat that will leave the leprechauns and kiddos asking for more! 

Ingredients:

3 large egg whites (room temperature)
1 pinch salt
3/4 cup sugar
4 packets of True Lime or 1 1/2 teaspoons lime zest (finely grated)
1/4 teaspoon vanilla extract
Green food coloring
Green sugar
Parchment paper
Piping bags (optional)
Round piping tip

Directions:
1. Preheat oven to 250 degrees.
2. Line 2 baking sheets with parchment, set aside.
3. Using a mixer, beat egg whites and salt until soft peaks form.
4. Combine sugar and True Lime (if using), add sugar slowly, beating continuously until egg whites are stiff but not dry.
5. Fold in lime zest (if using), vanilla and a few drops of green food coloring.
6. Fill piping bag with meringue and pipe meringue into shamrock shapes or drop by teaspoonfuls onto lined baking sheets.
7. Sprinkle with green sugar.
8. Bake until cookies are dry to the touch, but not brown - about 40-50 minutes.
9. Set aside to cool before removing from baking sheets.
