What do you do with all those boiled eggs?

With Easter comes eggs - lots of them if you're in my family. So, every year comes a new challenge of finding different ways to eat them up!

Eggs are an amazing and inexpensive food and should be a part of your daily healthy eating. Eggs are a complete protein, meaning they contain all 9 essential amino acids. The protein in eggs, about 6 grams in a whole egg, helps maintain and build muscle as well has curbs hunger. The choline in eggs helps support brain function and is essential in pregnancy. Eggs also help support vision with the antioxidants lutein and zeaxanthin. All this for only about 70 calories an egg!

Below is my favorite twist of a deviled egg recipe, I hope you enjoy it! Happy Easter!

Bacon & cheese deviled eggs

Bacon and Cheddar Deviled Eggs Yield 24

14 Hard Boiled Eggs

1/2 C. Light Mayonnaise

1/2 C. Light Sour Cream

1 tsp. Dijon Mustard

1 tsp. Fresh Lemon Juice

1/3 C. Center Cut Bacon - cooked and crumbled

1/4 C. Reduced Fat Sharp Cheddar Cheese - finely shredded

2 Tbls. Fresh Chives OR Green Onion - chopped

Pepper to taste

1. Cut eggs lengthwise in half and remove yolks to medium bowl. Reserve 24 white halves and finely chop remaining 4 white halves.

2. Mash yolks with fork. Add mayonnaise, sour cream, mustard, lemon juice and pepper; mix well. Add chopped egg whites, bacon, cheese and chives OR onion; mix well.

3. Spoon 1 heaping Tbsp. yolk mixture into each reserved egg white half. Refrigerate, covered, to blend flavors.
