At our end of the year baseball party, my favorite baseball mom, Melissa Duzan, brought these incredible cookies baked with Pop Rocks. I don't know who loved them more, the adults or the kids. I begged Melissa for the recipe so I could make them for myself my kids. She happily obliged...here's her recipe - enjoy!
Ingredients:
1 1/4 C sugar
1 C salted butter
3 egg yolks
2 tsp vanilla
2 1/2 C flour
1 tsp baking soda
1/2 tsp cream of tartar
1/4 tsp salt
2 packages Pop Rocks
Vanilla frosting
Sprinkles
Directions:
- Preheat oven to 350 degrees
- Cream butter and sugar together. Mix one egg yolk at a time and vanilla to batter
- Add flour, baking soda, cream of tartar, and salt - mix well
- Add 1/2 of each package of Pop Rocks to batter - mix
- Using medium scoop, form balls and place on cookie sheet lined with parchment paper. Do NOT flatten dough
- Bake 12 minutes, cool completely
- Mix leftover Pop Rocks and sprinkles together. Frost cookies and dip them into Pop Rock/sprinkles mixture
- Enjoy!
