Pop Rock Sugar Cookies

At our end of the year baseball party, my favorite baseball mom, Melissa Duzan, brought these incredible cookies baked with Pop Rocks. I don't know who loved them more, the adults or the kids. I begged Melissa for the recipe so I could make them for myself my kids. She happily obliged...here's her recipe - enjoy!

 

Ingredients:

1 1/4 C sugar

1 C salted butter

3 egg yolks

2 tsp vanilla

2 1/2 C flour

1 tsp baking soda

1/2 tsp cream of tartar

1/4 tsp salt

2 packages Pop Rocks

Vanilla frosting

Sprinkles

 

Directions:

  1. Preheat oven to 350 degrees
  2. Cream butter and sugar together. Mix one egg yolk at a time and vanilla to batter
  3. Add flour, baking soda, cream of tartar, and salt - mix well
  4. Add 1/2 of each package of Pop Rocks to batter - mix
  5. Using medium scoop, form balls and place on cookie sheet lined with parchment paper. Do NOT flatten dough
  6. Bake 12 minutes, cool completely
  7. Mix leftover Pop Rocks and sprinkles together. Frost cookies and dip them into Pop Rock/sprinkles mixture
  8. Enjoy!
