Mix the egg white and vanilla until foamy but not stiff. Then sift the flour, salt, and sugar and blend into the egg white mixture. The batter will be just a little bit runny. Grease up a cookie sheet. Place teaspoons of batter onto the cookie sheet and using the back of the spoon to spread thin. Bake in the oven at 350 degrees for about 3-5 minutes or until the edges of the cookie are browned. Using a metal spatula, quickly remove cookies carefully. Place the fortune in the middle of the cookie and then fold in half. Using the side of a soup bowl or mug, place the center of the cookie at the rim, bend it in to form shape and leave to cool. As it cools it will harden! Enjoy!
